Before we even knew it summer has almost flown by in the blink of an eye and Back To School time is already upon us. Besides shopping for school supplies and dealing with children's potential end-of-summer-blues and pre-school anxieties, it also means that preparing school lunches and after school snacks is back on the parenting agenda.
The Back To School to-do list can feel endless sometimes and it's easy for both parents and kids to start feeling overwhelmed.
That's why parents don't really want to have to spend a lot of time preparing complicated and time-consuming recipes the morning of the first day of school and risk blowing up the entire kitchen in the process. On the other hand, food is an essential part of a kid's daily routine and you want your kids to be happy, healthy and fuelled with energy for their big day.
But who says that preparing school snacks has to be difficult and lengthy?
Here are 3 recipes that are fast and easy to prepare and make for delicious, fun and nutritious lunch box or after school snacks!
We're all guilty of occasionally craving the crunchy delight of a bag of chips, but these self-made kale chips are a much healthier alternative that will give you the same crispy satisfaction nonetheless. So both you and your kid can go ahead and start munching without guilt!
All you need is:
Fresh Kale
Olive oil
Salt
Grated parmesan
Preheat your oven to 200 degrees and coat the kale in olive oil, grated parmesan and add some salt for seasoning. Then bake it in the oven for about 20-25 minutes until it is nice and crunchy.
The subtle sweetness of these delicious scone cookies will make your kid and you forget even the heaviest post summer vacation blues. They are the perfect snack to bring as a little treat in a lunch box or regain some energy in the afternoon after a long school day.
Ingredients:
1 1/2 cup of almond flour
1/2 tsp baking soda
1 mashed banana
1 tsp apple cider vinegar
1 egg
First, preheat the oven to 350 degrees Fahrenheit. Then, mix together the baking soda and flour in a bowl. Get another bowl to whisk together the egg, the mashed banana and stir in the apple cider vinegar. Now it's time to combine the wet and the dry ingredients and scoop the dough onto a parchment lined baking sheet. Top everything with some blueberries and a sprinkle of cinnamon and bake for about 15 minutes until the toothpick comes out clean.
With only 3 ingredients, this delicious wrap is super easy and fast to make and an ideal option in case time is running out in the morning but you still want to pack your kid a tasty snack.
Literally all you need is:
Peanut Butter
1 banana
1 wrap (corn, wheat, or whole wheat according to your personal preference)
Spread out some peanut butter evenly across the wrap, chop up the banana, add it on top and then roll everything into a conveniently portable wrap. Super easy but just as delicious as a loaded sandwich and a great option to satisfy your sweet tooth needs without consuming loads of unhealthy added sugar.
